My husband’s in the suburbs tonight so I’m all alone…time to try a salad… Pg 114 of Back to the Table: Bibb Lettuce Salad with Pecans, Blue Cheese, and Pears.
I decided this recipe needed a little meat so I added some cubed rotisserie chicken cooked at the grocery store.
The pecans were a challenge as they all stuck together and ended up to be not as sweet as I would have like. Next time I will add a little brown sugar or more honey.
The dressing was disappointing. I thought the fancy vinegar would have made this sweeter. Next time I will add some sugar to it.
End result: The salad was HUGE. I really should have made it when my husband was here as a lot of it went to waste.
